  • 1 pc bay leaf
  • 1 pc red chili, sliced
  • ½ tbsp black peppercorn
  • ¼ tsp freshly ground pepper
  • 2 sachets 8g MAGGI® MAGIC SARAP®
  • 1 pc large front pork leg with hock (pata)
  • 2 tbsp soy sauce
  • 8 cups vegetable oil for deep frying
  • ¼ cup vinegar
  • 1 pc large red onion, chopped
  • 1 tbsp brown sugar
  • 2 cloves garlic, minced
Step 1
Simmer pork in water for 1 hour. Add bay leaf, pepper and season with MAGGI® MAGIC SARAP®. Simmer until tender. Remove pork and set aside to cool. Reserve broth for other dishes.
Step 2
For the Vinegar-Soy dip, combine vinegar, soy sauce, garlic, onion, chili, pepper and sugar in a bowl. Mix well and set aside.
Step 3
Deep fry pork in preheated oil until crispy. Set aside to drain excess oil. Chop, transfer on a serving plate and serve with Vinegar-Soy dip.
