If the quantities are increased, the cooking time may be extended, so look again. Use water & spices sparingly at first and add more later if needed.
Sauté lechon in oil until golden brown. Strain and set aside.
Sauté garlic, onion, tomato and carrot in the same oil. Add rice and cook for 2 minutes.
Make a well in the center and pour beaten eggs. Stir and cook until barely set. Stir in with the rice.
Season with MAGGI® Magic Sarap® and add left over lechon sauce. Fluff until steaming hot. Stir in spring onion. Transfer on a serving plate top with lechon and serve.
