If the quantities are increased, the cooking time may be extended, so look again. Use water & spices sparingly at first and add more later if needed.
Combine carrot, sweet potato, corn, red onion and spring onion. Season with MAGGI® Magic Sarap®. Add flour and coat well. Set aside.
To make the batter, mix flour with cornstarch. Pour ice cold water and mix until just combined. Batter must be very cold, lumpy and slightly runny.
Mix vegetables with the batter. Scoop about 3 tbsp of the mixture using a ladle. Carefully drop in preheated oil and fry for 3 – 4 minutes per side. Do this in batches to maintain temperature of the oil.
Transfer into a cooling rack to drain excess oil. Cut into serving pieces and serve with MAGGI Savor Hot Chili.
